Clover Nolac Lemon Ice Cream

2 Cups Clover Nolac milk
4 Eggs yolks
½ Cup Sugar
¼ Cup Lemon curd, dairy free if you can not have butter
1 tsp Vanilla paste

To serve, Crumbed dairy free biscuits of your choice, optional

Bring a pot with a small amount of water to the boil.
Add the milk and vanilla paste to another sauce pot and bring to the boil,
then remove from the heat.

In a heat-proof mixing bowl add the egg yolks and sugar and whisk until pale in colour.
Slowly pour the mix mixture into the egg mixture, whisking continuously.
Place the bowl over the boiling water and allow the custard to thicken.
Place the custard mixture into an ice-cream churner or into a 2L freezer safe container, add the lemon curd and fold through.
If you are placing it into a container, make sure the whisk the mixture every 30 minutes, until frozen.
Serve the ice-cream with scooped onto some sugar cones or in a bowl topped with crushed biscuits.
