almond chicken

Almond Chicken

Serves 6

 

Ingredients:

  • 3 Tbs oil
  • 1 kg chicken pieces
  • 1 onion, finely chopped
  • 1 garlic clove, crushed
  • 2 tsp ground ginger
  • 2 tsp curry powder
  • 2 tins (410 g) chopped tomatoes
  • 2 tsp dried sweet basil
  • 2 cups water
  • 4 Tbs KNORR Minestrone Soup
  • 50 g almond flakes

 

Method:

 

  1. In a large pot, heat oil and fry chicken until lightly browned. Remove and set aside.
  2. Add onion, garlic, ginger, curry powder, and fry for 2 minutes.
  3. Add tomatoes and sweet basil and simmer for 15 minutes, stirring occasionally.
  4. Return chicken to the pot, add water and simmer for 40 minutes.
  5. Mix the KNORR Minestrone Soup with a little water to form a smooth paste and stir into the stew. Simmer for 5 minutes and allow to thicken.
  6. Sprinkle with almonds and serve with basmati rice.
