Almond Chicken
Serves 6
Ingredients:
- 3 Tbs oil
- 1 kg chicken pieces
- 1 onion, finely chopped
- 1 garlic clove, crushed
- 2 tsp ground ginger
- 2 tsp curry powder
- 2 tins (410 g) chopped tomatoes
- 2 tsp dried sweet basil
- 2 cups water
- 4 Tbs KNORR Minestrone Soup
- 50 g almond flakes
Method:
- In a large pot, heat oil and fry chicken until lightly browned. Remove and set aside.
- Add onion, garlic, ginger, curry powder, and fry for 2 minutes.
- Add tomatoes and sweet basil and simmer for 15 minutes, stirring occasionally.
- Return chicken to the pot, add water and simmer for 40 minutes.
- Mix the KNORR Minestrone Soup with a little water to form a smooth paste and stir into the stew. Simmer for 5 minutes and allow to thicken.
- Sprinkle with almonds and serve with basmati rice.
