Angel fish with sauté watermelon, feta and green bean salad
Serves 2
2 fillets Angel fish
100g watermelon, diced
Splash of red wine vinegar
100g green beans
Extra virgin olive oil
150g feta
Pan fry fish until cooked through, about 3 minutes each side depending on the size of the fillets. Remove the fish from the pan and quickly sauté the watermelon, deglaze with the vinegar then remove from the pan. Boil the green beans then place into a bowl with the olive oil, crumble in the feta and add the watermelon. Serve with the fish and dress with a final drizzle of olive oil.
