Apple Bran Cake 

Serves 8

Ingredients: 

  • 125ml (1/2 cup) vegetable oil
  • 160ml milk
  • 2 extra-large eggs
  • 500g Sasko Quick Treats Bran Muffin Mix
  • 1 x 800g can pie apples
  • 60ml (1/4 cup) raisins
  • 50g pecan nuts, chopped
  • 100g (1/2 cup) sugar
  • 10ml (2 tsp) ground cinnamon

 Method:

  1. Whisk the oil, milk and eggs together in a mixing bowl.
  2. Add the Sasko Quick Treats Bran Muffin Mix and beat with an electric beater on low speed, or by hand with a whisk, for about a minute until combined.
  3. Spoon half the batter into a greased or sprayed 23cm loose-bottomed cake tin.
  4. Combine the apples and raisins and spoon over the muffin mixture.
  5. Toss the nuts with the sugar and cinnamon and sprinkle half this mixture over the fruit.
  6. Top with the remaining muffin batter and sprinkle the remaining nut mixture on top.
  7. Bake in a pre-heated oven at 170°C for 45-50 minutes.
  8. Cool in the pan for 10 minutes before removing.
  9. Serve warm or cold with cream.
