Apple Bran Cake
Serves 8
Ingredients:
- 125ml (1/2 cup) vegetable oil
- 160ml milk
- 2 extra-large eggs
- 500g Sasko Quick Treats Bran Muffin Mix
- 1 x 800g can pie apples
- 60ml (1/4 cup) raisins
- 50g pecan nuts, chopped
- 100g (1/2 cup) sugar
- 10ml (2 tsp) ground cinnamon
Method:
- Whisk the oil, milk and eggs together in a mixing bowl.
- Add the Sasko Quick Treats Bran Muffin Mix and beat with an electric beater on low speed, or by hand with a whisk, for about a minute until combined.
- Spoon half the batter into a greased or sprayed 23cm loose-bottomed cake tin.
- Combine the apples and raisins and spoon over the muffin mixture.
- Toss the nuts with the sugar and cinnamon and sprinkle half this mixture over the fruit.
- Top with the remaining muffin batter and sprinkle the remaining nut mixture on top.
- Bake in a pre-heated oven at 170°C for 45-50 minutes.
- Cool in the pan for 10 minutes before removing.
- Serve warm or cold with cream.
