Apple Crostada With Cheddar Crust

Serves 10 

 

Ingredients:

  • 2 ½ cups Sasko cake flour
  • 225g cold butter, chopped
  • 1/4 cup ice water
  • 1 cup grated mature cheddar cheese
  • 1 egg, whisked
  • 2 apples, sliced into wedges
  • 1/2 cup sugar
  • 2T flour
  • 2T fresh lemon juice
  • ¼ t ground cinnamon
  • ¼ cup apricot jam, warmed

 

Method:

 

  1. For the cheddar crust: blend flour and a pinch of salt in a food processor with butter until coarse.
  2. Add enough water to form a dough.
  3. Add cheese and pulse until combined. Wrap and chill for 1 hour.
  4. Roll out to form a disc and refrigerate.
  5. For the filling: toss apples, sugar, flour, lemon juice and cinnamon together.
  6. Spread filling over pastry, leaving a border.
  7. Fold edges in to form a crust, brush with egg wash and sprinkle with a little sugar. Refrigerate 1/2 hour.
  8. Bake at 180°C until crust is golden (about 80 minutes).
  9.  Cool and brush with apricot jam.
