Apple Crostada With Cheddar Crust
Serves 10
Ingredients:
- 2 ½ cups Sasko cake flour
- 225g cold butter, chopped
- 1/4 cup ice water
- 1 cup grated mature cheddar cheese
- 1 egg, whisked
- 2 apples, sliced into wedges
- 1/2 cup sugar
- 2T flour
- 2T fresh lemon juice
- ¼ t ground cinnamon
- ¼ cup apricot jam, warmed
Method:
- For the cheddar crust: blend flour and a pinch of salt in a food processor with butter until coarse.
- Add enough water to form a dough.
- Add cheese and pulse until combined. Wrap and chill for 1 hour.
- Roll out to form a disc and refrigerate.
- For the filling: toss apples, sugar, flour, lemon juice and cinnamon together.
- Spread filling over pastry, leaving a border.
- Fold edges in to form a crust, brush with egg wash and sprinkle with a little sugar. Refrigerate 1/2 hour.
- Bake at 180°C until crust is golden (about 80 minutes).
- Cool and brush with apricot jam.
