Apple Crumb Cake

Makes 2 loaves

Ingredients:

Crumble:

  • 60g Sasko cake flour
  • 40g Demerara sugar
  • 40g cold unsalted butter, diced

 

Cake:

  • 140ml oil
  • 120ml milk
  • 2 extra large eggs
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • Zest of 1 lemon
  • 1 x 500g Sasko Quick Treats Vanilla muffin mix

 

Filling:

  • 1 x tin pie apples, drained
  • ½ cup Demarera sugar
  • 1 tsp ground cinnamon

 Method:

  1. Preheat oven to 150°C. Grease and line two loaf tins.
  2. To make the crumble, stir the flour and sugar to combine. Rub the butter into the flour with your fingertips until coarse breadcrumbs. Set aside.
  3. Whisk the oil, milk, eggs, vanilla, cinnamon and lemon zest until combined. Stir in the Sasko Quick Treats vanilla muffin mix until smooth.
  4. Spoon into prepared cake tins and level the top. Mix the pie apples, sugar and cinnamon and spoon over the cake batter.
  5. Sprinkle the crumble evenly over the surface and bake for 50-60 minutes or until the skewer comes out clean and the crumble is lightly golden.
  6. Cool in tin for 10 minutes, before removing it from the tin and cooling it on a wire rack.
