B-well Corn Fritters with Avo Mousse, Tomato Salsa and Zesty Cream Cheese

B-Well Corn Fritters with Avo Mousse, Tomato Salsa and Zesty Cream Cheese

1 tin Creamed Corn
½ cup Corn kernels 
2 Eggs
1 cup Flour
½ tsp Baking powder        
1 tsp Smoked Paprika
½ tsp Cayenne pepper      
1 tbsp Coriander, chopped
1 tbsp B-Well Simply Garilc Canola Oil
Salt and Pepper
2 Avos, peeled and pip out
2 Limes, zest and juice
1 cup Exotic tomatoes
½ Red Onion, minced
1 tbsp B-Well Zesty Lemon Canola Oil
½ cup Cream Cheese
1 Lemon, juice and zest  
 
Place the creamed corn, kernels and eggs in a bowl. Mix to combine, then add the flour, baking powder, spices and coriander. Mix again, then add B-Well oil, salt and pepper. Mix once more to combine. The consistency should be that of crumpets / flapjack batter. Add a splash of milk if it is too thick. Allow to stand for fifteen minutes.
Place the avos, lime, salt and pepper into a blender, and blitz until completely smooth. Place in a piping bag for serving.
Cut the tomatoes into desired shape / size, and combine with the red onion and B-Well oil in a bowl. Add salt and pepper, mix well, and set aside for serving. 
In a bowl, mix the cream cheese, lemon and a pinch of salt. Place in a piping bag for assembly.
Add a splash of B-Well Oil to a frying pan over medium heat, and fry 2 tbsp of the fritter mixture until golden brown and crisped. Drain on paper towel and keep warm in the oven while you finish the batter. 
To assemble, place a stack of corn fritters on a plate. Pipe the avo mousse onto and around the fritters. Add a generous spoonful of tomato salsa on top of the stack, followed by dollops of the cream cheese. Finish with a drizzle of B-Well Zesty Lemon Oil and serve immediately.
