B-well Artisan Ostrich Burgers

B-well Artisan Ostrich Burgers
Recipe from the B-well Happy Heart Cookbook
COOKING TIME: 45 minutes

For the patties
2 tbsp B-well Canola and Olive Oil Blend
500g ostrich mince
½ onion, finely chopped
¼ green pepper, finely chopped
3 tbsp chutney
1 tbsp coriander, ground
6 tbsp breadcrumbs
1 egg, beaten
1 tbsp parsley, chopped
3 tbsp basil, chopped
Salt and pepper
For the sauce
3 tbsp B-well Thick and Creamy Mayonnaise
2 tbsp tomato ketchup
1 tsp chipotle chilli sauce
1 tsp Worcestershire sauce
¼ head iceberg lettuce, finely chopped
4 sesame burger buns, halved and toasted
1 cup caramelised onions
4 slices cheddar cheese
Tomato, cucumber, gherkins and avo all optional extras                  
Chips / Salad to serve

For the patties, combine the onions and peppers, and mix well. Add the mince, mix again. Add the remaining patty ingredients plus a big pinch of salt and pepper, and mix well again.
Divide the mince into 4 equal balls, and press down to shape / form patties. Allow to rest in fridge for 15 minutes.
For the sauce, simply combine and mix all the ingredients well and set aside.
Rub the patties all round with a splash of B-well Canola and Olive Oil, and place in a non-stick pan or grill over high heat. Press flat with spatula for 1 minute on each side, turning constantly. Cook for 4 minutes.
Add the cheese slices on top of patties, and a splash of water to the pan and place a lid over the top to allow cheese to melt.
To assemble, add some burger sauce to the base of your rolls. Top with the cheesy ostrich patty, and some caramelised onions. Garnish with desired ingredients, gently press together, and enjoy with your favourite sides!
