BBQ Salmon, Watermelon And Mint Salad

Serves 4

Ingredients:

  • 360g salmon fillets or chicken breasts
  • 100ml BBQ marinade
  • 200g watermelon
  • 200g mixed salad leaves
  • 1/2 bunch mint leaves
  • 100ml KNORR Light French Salad Dressing
  • KNORR Thousand Island dressing, to garnish

 Method:

  1. In a baking dish place the salmon or chicken breasts and cover with BBQ Marinade.
  2. Bake in a preheated 180°C oven for 15-20 minutes, basting every 5 minutes.
  3. Once cooked, cut into strips.
  4. Using a melon-baller, scoop the watermelon flesh into ball shapes.
  5. In a serving dish place the salad leaves and top with the watermelon balls and mint leaves.
  6. Drizzle with KNORR Light French Salad Dressing.
  7. Add chicken to salad and toss well then serve drizzled with Thousand Island dressing.
