CHAMPIONSHIP BOEREWORS and DATE SOSATIES with curry mayo

SOSATIE INGREDIENTS:

12 Baby onions
1,2 kg Boerewors
24 Soft dried apricots
24 Fresh dates pitted
12 Bamboo sticks

HOW TO MAKE THE SOSATIES

Blanch onions in water for 1 minute.
Pull off the skins and cut in halves. Cover and set aside.
Prick boerewors a few times and fry in a dry non-stick pan for 20 minutes or until golden brown.
Allow to cool and slice boerewors into segments at an angle.
Spear 3 pieces of wors, 2 pieces of dried apricots, 2 dates and 2 onion halves onto each bamboo stick.

SERVE WITH CURRY MAYO

1 Tbls sunflower oil
2 Large onions, roughly chopped
1 Clove of garlic, finely chopped
1 Tbls balsamic vinegar
2 Tbls water
1 Tbls brown sugar
2 Tsp curry powder
200g French or homemade mayo

HOW TO MAKE THE CURRY MAYO

Heat all ingredients in a pan except the mayo.
Simmer over low heat until the onions are soft.
Place in blender and blend till smooth.
Stir in the mayo.
Cover and cool.
