
Bacon and Egg Toast Cups
PnP shopping list: 6 slices brown bread, butter, 6 slices streaky bacon, 4 eggs, 2T milk, Garlic and herb seasoning
- 6 slices of sliced brown bread
- Butter or margarine - softened for spreading
- 6 slices streaky bacon - just cooked (it will become crispy when baking)
- 4 large eggs
- 2 Tbs milk
- Garlic and herb seasoning
How To Make It:
1. Set oven to 180 degrees C.
2. Use a cookie cutter to cut a ring out of each slice of bread.
3. Flatten the bread rings with the rolling pin.
4. Butter the bread and then place butter-side-down into the muffin pan.
5. Place one length of streaky bacon into each bread case - it’s fine if it sticks out either side.
6. Crack the eggs into a jug, add the milk and seasoning and whisk.
7. Divide the egg mixture between the 6 muffin pans.
8. Place in the oven and bake for 12mins or until the egg is cooked through.
