Baked Fish in Sesame Sauce (17 Aug)

BAKED FISH IN SESAME SAUCE
Serves 4
PnP shopping list: 2 garlic cloves, 1/2C tahini, lemon, onion, 1T olive oil, 1 whole fish, 2t dried thyme
Sauce:
- 2 cloves of garlic
- Pinch of salt
- 125ml (1/2 cup) sesame paste (tahini)
- Juice of 1 lemon, about 60ml
- 1 onion, thinly sliced
- 15ml (1tbsp) olive oil plus extra
- 1 whole sustainable fish of your choice
- 7,5ml (1 ½ tsp) dried thyme
- Salt and pepper
- Lemon wedges and pomegranate seeds to garnish
How To Make It:
- Crush the garlic in a little salt and mix with the sesame paste and lemon juice with enough water to form a mayonnaise consistency.
- Fry the onion in the oil until just softened and add to the sauce.
- Blend the sauce until smooth.
- Oil a baking dish big enough to hold the fish.
- Cut slits into the fish and rub with oil and sprinkle over thyme and season generously.
- Bake at 180 degrees C for 30 minutes, remove from the oven and pour over sauce, top with the raw onion then return to the oven for a further 15 minutes.
- Serve garnished with lemon wedges and pomegranate seeds.
