Baked Fish in Sesame Sauce

BAKED FISH IN SESAME SAUCE

Serves 4

PnP shopping list: 2 garlic cloves, 1/2C tahini, lemon, onion, 1T olive oil, 1 whole fish, 2t dried thyme 

Sauce:

  • 2 cloves of garlic
  • Pinch of salt
  • 125ml (1/2 cup) sesame paste (tahini)
  • Juice of 1 lemon, about 60ml
  • 1 onion, thinly sliced
  • 15ml (1tbsp) olive oil plus extra
  • 1 whole sustainable fish of your choice
  • 7,5ml (1 ½ tsp) dried thyme
  • Salt and pepper
  • Lemon wedges and pomegranate seeds to garnish

How To Make It: 

  1. Crush the garlic in a little salt and mix with the sesame paste and lemon juice with enough water to form a mayonnaise consistency.
  2. Fry the onion in the oil until just softened and add to the sauce.
  3. Blend the sauce until smooth.
  4. Oil a baking dish big enough to hold the fish.
  5. Cut slits into the fish and rub with oil and sprinkle over thyme and season generously.
  6. Bake at 180 degrees C for 30 minutes, remove from the oven and pour over sauce, top with the raw onion then return to the oven for a further 15 minutes.
  7. Serve garnished with lemon wedges and pomegranate seeds.
