Banoffi Pie

No baking required) 

Serves 4 – 6

Make for grandparents for tea over the weekend….


200g biscuits / digestive or tennis

100g butter

1 Tablespoon Golden Syrup

1 tin Caramel

1 Large Banana

200ml Whipped Cream

5ml Vanilla Essence


To decorate:

Flake / peppermint crisp

Pecan nuts cut into halves


Empty the biscuits in to a large, thick bag, tie closed.  Crush with your hands or with a rolling pin. 

Melt the butter & golden syrup (place in microwave for about 40 / 60 seconds). 

Mix the breadcrumbs & butter mixture together well and place into a container for serving (or individual containers). 

Put into the fridge while you make your filling.

Empty your caramel on top of the biscuit base, spread with a knife.

Slice your bananas, place on top of the caramel.

Whip the cream to a thick consistency, but not too thick. 

Add 5ml vanilla essence to the cream.

Place cream over the bananas.  Sprinkle with flake.

Chill in the fridge for about 1 hour before serving.
