Battered Brinjal / Aubergine
Ingredients:
- 1 large Brinjal
- 1 tsp Hinds Turmeric powder
- 1 tsp salt
- 1 cup Pakco Chilli Bite Mix
- ¼ cup water (approximately)
- Oil for deep frying
Method:
- Cut brinjals into thin rings. Place in a bowl with salt, Hinds Tumeric powder and add sufficient water to cover brinjal. Set aside.
- Place Pakco Chilli Bite Mix in a bowl and add water a little at a time to make a thick, consistent batter
- Drain the water from the brinjal and dab them with a paper towel to remove excess water.
- Heat oil .Dip brinjal rings into batter and fry in hot oil until golden brown in colour.
- Place in a colander lined with paper towel to absorb excess oil.
Tasty Tip: Serve with Pakco Pepper Sauce
