Beetroot And Goats Cheese Salad With Beetroot Sprouts 

Serves 2

Ingredients: 

  • 1 beetroot, washed and peeled (raw)
  • 30ml balsamic reduction
  • 50g pumpkin seeds
  • 50g rocket
  • 30ml olive oil
  • Salt and pepper
  • 100g plain goat’s cheese
  • Beetroot sprouts

Method: 

  1. Slice the beetroot thinly and drizzle with balsamic reduction.
  2. Toast the pumpkin seeds in a dry pan.
  3. Dress the rocket with olive oil and season then place onto a serving plate.
  4. Top the dressed rocket with the marinated beetroot then crumble over the goat’s cheese.
  5. Sprinkle over the pumpkin seeds and finally the beetroot sprouts.
  6. Drizzle with more balsamic reduction before serving.
