Beetroot And Goats Cheese Salad With Beetroot Sprouts
Serves 2
Ingredients:
- 1 beetroot, washed and peeled (raw)
- 30ml balsamic reduction
- 50g pumpkin seeds
- 50g rocket
- 30ml olive oil
- Salt and pepper
- 100g plain goat’s cheese
- Beetroot sprouts
Method:
- Slice the beetroot thinly and drizzle with balsamic reduction.
- Toast the pumpkin seeds in a dry pan.
- Dress the rocket with olive oil and season then place onto a serving plate.
- Top the dressed rocket with the marinated beetroot then crumble over the goat’s cheese.
- Sprinkle over the pumpkin seeds and finally the beetroot sprouts.
- Drizzle with more balsamic reduction before serving.
