Braai Baked Potatoes with Sausages
Serves 6
Ingredients:
- 6 potatoes
- Olive oil
- Salt and black pepper
- 60ml sour cream
- 45ml mayonnaise
- 45ml natural yoghurt
- 60ml chutney
- 1 tsp curry powder
- 45ml chopped chives
- 2 garlic cloves, crushed
- Squeeze of fresh lemon juice
- 6 Enterprise country sausages
- 100ml braai rib marinade
- 30ml sherry
Method:
- Rub the potatoes with olive oil, salt and pepper and bake for about an hour or until the flesh is soft and the skin is crispy.
- While the potatoes bake, mix the sour cream, mayonnaise, yoghurt, chutney, curry powder, chives, garlic and lemon juice together. Season to taste with salt and pepper.
- Saute the Enterprise country sausages over medium heat until cooked through. Mix the marinade and sherry and add to the sausages - simmer until sticky.
- Slice the potatoes open, spoon the sauce inside and insert the warm sausages into each potato.
- Serve straight away with a mixed salad.
