Brown Sugar Fudge Expresso

Brown Sugar Fudge

4 cups of light brown sugar
1 can evaporated milk
25g butter
5ml vanilla extract


Grease a square baking tin well with butter.
Place the sugar, butter and evaporated milk into a saucepan and slowly heat while stirring gently. Make sure that the sugar is dissolved before it boils.
Boil over a medium heat until the sugar reaches 116⁰C (or “soft ball” stage: when a teaspoon of the sugar syrup is placed into a cool glass of water, it forms a soft ball of sugar)
Remove from the heat and add vanilla.
Allow to cool for about 5 minutes.
Beat the fudge with an electric beater until it loses its shine.
Quickly pour into the prepared baking tin and pat the top smooth.
Allow to set overnight. Cut into cubes and store in an airtight container.
