Burger Cupcakes
Makes 4
8 vanilla muffins
Apricot jam
2 Tbs Sesame seeds
4 chocolate muffins
White icing
Green, red and yellow food colouring
Icing sugar
Water
- Cut the tops off of the vanilla muffins and brush 4 of the tops with jam then sprinkle on the sesame seeds
- Cut the chocolate muffins in half
- Divide the icing into two and colour one with red (for the tomatoes) and the other green (for the lettuce).
- Roll the red icing into a log and slice to form round disks.
- Tear the green icing to form rough lettuce leaves.
- Mix the icing sugar with enough water to form a runny icing, then divide into two and colour one bowl yellow (for mustard) and the other red (for tomato sauce).
- Assemble the burger: Place the plain vanilla muffin top onto a plate, top with the green lettuce then drizzle over the red tomato sauce. Top with the chocolate muffin base, then the yellow mustard. Top with the vanilla muffin with the sesame seeds.
