Butternut, Caramelised Onion and Goats Cheese Quiche

Serves 4

 

Ingredients:

  • 1 roll PnP short crust pastry
  • Olive oil
  • 250g butternut, peeled and thinly sliced
  • 2 Tbs fresh thyme, finely chopped
  • Salt and pepper
  • 250ml caramelised onions
  • 100g plain goat’s cheese
  • 3 eggs
  • 250ml cream

 

Method:

 

  1. Roll out the short crust pastry and line a quiche tin.
  2. Blind bake the pastry until cooked through and golden.
  3. Heat olive oil in a large pan then add the butternut.
  4. Sauté until softened and starting to colour around the edges.
  5. Add the thyme and season to taste.
  6. Place the caramelised onions at the base of the cooked pastry.
  7. Top with the butternut then crumble over the goat’s cheese.
  8. Whisk together the eggs and cream and season.
  9. Pour that mixture over the filling then place into the oven until the egg is set.
  10. Leave to cool before slicing into wedges and serving.
