Butternut, Caramelised Onion and Goats Cheese Quiche
Serves 4
Ingredients:
- 1 roll PnP short crust pastry
- Olive oil
- 250g butternut, peeled and thinly sliced
- 2 Tbs fresh thyme, finely chopped
- Salt and pepper
- 250ml caramelised onions
- 100g plain goat’s cheese
- 3 eggs
- 250ml cream
Method:
- Roll out the short crust pastry and line a quiche tin.
- Blind bake the pastry until cooked through and golden.
- Heat olive oil in a large pan then add the butternut.
- Sauté until softened and starting to colour around the edges.
- Add the thyme and season to taste.
- Place the caramelised onions at the base of the cooked pastry.
- Top with the butternut then crumble over the goat’s cheese.
- Whisk together the eggs and cream and season.
- Pour that mixture over the filling then place into the oven until the egg is set.
- Leave to cool before slicing into wedges and serving.
