Chicken Curry in a Hurry

Serves 4- 6

 

Ingredients:

  • 30ml (2Tbs) sunflower oil
  • 1 onion, chopped
  • 6 chicken breast fillets, cubed
  • 1 large jar or 2 sachets of readymade curry sauce
  • 250g fresh baby spinach leaves
  • Salt and pepper to taste
  • Fresh coriander, to garnish

 

Method:

  1. Heat the oil in saucepan and fry the onion till soft.
  2. Add the chicken pieces and brown.  
  3. Pour over the sauce and bring to the boil.
  4. Reduce the heat, cover the pan and simmer for 10 minutes, stirring occasionally.
  5. Stir in the spinach and cook until just wilted.
  6. Season.
  7. Serve with basmati rice and naan bread or roti.
