Chicken Curry in a Hurry (12 Jul)

Ingredients:
- 30ml (2Tbs) sunflower oil
- 1 onion, chopped
- 6 chicken breast fillets, cubed
- 1 large jar or 2 sachets of readymade curry sauce
- 250g fresh baby spinach leaves
- Salt and pepper to taste
- Fresh coriander, to garnish
Method:
- Heat the oil in saucepan and fry the onion till soft.
- Add the chicken pieces and brown.
- Pour over the sauce and bring to the boil.
- Reduce the heat, cover the pan and simmer for 10 minutes, stirring occasionally.
- Stir in the spinach and cook until just wilted.
- Season.
- Serve with basmati rice and naan bread or roti.
