Chocolate Chilli Con Carne With Cornbread Topping

Serves 4

 

Ingredients:

  • 500g mince meat
  • 1 large onion
  • 2 red peppers
  • 2 Tbs tomato paste
  • Red chillies (as many as you like depending on taste)
  • 1 tin chopped tomatoes
  • 1 can red kidney beans
  • 4-6 blocks chocolate, chopped
  • Salt and Pepper

 

For the corn bread topping:

  • 2 cups cake flour
  • 1 Tbs baking powder
  • ½ tsp salt
  • 2 eggs, beaten
  • 1 cup milk
  • ¼ cup melted butter
  • ¼ cup sugar
  • 1 tin corn kernels

 

Method:

 

  1. Brown the mince in a pot.
  2. Add onions and peppers and sauté until the vegetables are translucent.
  3. Add the tomato paste, chillies and tomatoes then simmer on a low temper for half an hour.
  4. Add the beans and the chocolate and stir until melted.
  5. Make the cornbread topping by combining all the ingredients in a bowl.
  6. Spoon the chilli into an oven dish.
  7. Dollop on the cornbread topping and bake at 180C until the topping is cooked through and slightly browned.
