Chocolate Chilli Con Carne With Cornbread Topping
Serves 4
Ingredients:
- 500g mince meat
- 1 large onion
- 2 red peppers
- 2 Tbs tomato paste
- Red chillies (as many as you like depending on taste)
- 1 tin chopped tomatoes
- 1 can red kidney beans
- 4-6 blocks chocolate, chopped
- Salt and Pepper
For the corn bread topping:
- 2 cups cake flour
- 1 Tbs baking powder
- ½ tsp salt
- 2 eggs, beaten
- 1 cup milk
- ¼ cup melted butter
- ¼ cup sugar
- 1 tin corn kernels
Method:
- Brown the mince in a pot.
- Add onions and peppers and sauté until the vegetables are translucent.
- Add the tomato paste, chillies and tomatoes then simmer on a low temper for half an hour.
- Add the beans and the chocolate and stir until melted.
- Make the cornbread topping by combining all the ingredients in a bowl.
- Spoon the chilli into an oven dish.
- Dollop on the cornbread topping and bake at 180C until the topping is cooked through and slightly browned.
