Classic Bread and Butter Pudding
Serves 4
Ingredients:
- 50g soft butter
- 10 slices soft white bread
- 50g raisins
- 250 ml Full cream milk
- 150 ml cream
- 2 large eggs
- 25g Selati castor sugar
- 1 tsp vanilla extract
- ¼ tsp ground nutmeg
- ¼ tsp ground cinnamon
Method:
- Preheat oven to 180C.
- Butter the slices of bread with the butter then cut across to form triangles.
- Place half the buttered bread into a greased oven dish and lay the bread overlapping.
- Sprinkle with half the raisins, then repeat layering the rest of the bread and sprinkle with the remaining raisins.
- In a saucepan, gently heat the milk and cream.
- In a bowl, whisk together the eggs, sugar, vanilla, nutmeg and cinnamon then pour on the hot cream.
- Pour the custard over the bread and leave to sit for 10 minutes.
- Bake in the oven for 40 – 45 minutes until the custard is set and the bread is toasted and golden brown.
