Classic Bread and Butter Pudding

Serves 4

Ingredients:

  • 50g soft butter
  • 10 slices soft white bread
  • 50g raisins
  • 250 ml Full cream milk
  • 150 ml cream
  • 2 large eggs
  • 25g Selati castor sugar
  • 1 tsp vanilla extract
  • ¼ tsp ground nutmeg
  • ¼ tsp ground cinnamon

 Method:

  1. Preheat oven to 180C.
  2. Butter the slices of bread with the butter then cut across to form triangles.
  3. Place half the buttered bread into a greased oven dish and lay the bread overlapping.
  4. Sprinkle with half the raisins, then repeat layering the rest of the bread and sprinkle with the remaining raisins.
  5. In a saucepan, gently heat the milk and cream.
  6. In a bowl, whisk together the eggs, sugar, vanilla, nutmeg and cinnamon then pour on the hot cream.
  7. Pour the custard over the bread and leave to sit for 10 minutes.
  8. Bake in the oven for 40 – 45 minutes until the custard is set and the bread is toasted and golden brown.
