Clover Bliss Lemon and Poppy Seed Tea Loaf

2 Large eggs
1 Cup Clover Bliss Lemon Meringue flavoured yoghurt
2 Tbsp Lemon Juice
2 Tbsp Clover MooiRivier Salted Butter, melted
1 tsp Vanilla extract
2 Cups Self-rising flour
1 Cup Castor sugar
1 tsp Bicarb
1 tsp Fine salt
2 Tbsp Poppy seeds
Zest of 3 lemons
 
Glaze
1 Cup Clover Bliss Lemon meringue flavoured yoghurt
 
Preheat the oven to 180oC. Line a loaf tin with baking paper and spray with baking spray.
In a large mixing bowl combine the eggs, Clover Bliss Lemon Meringue Flavoured Yoghurt, butter and vanilla extract until well combined. 
In a separate bowl combine the flour, bicarb, salt, poppy seeds, castor sugar and lemons until well combined. Add the liquid to the flour and mix until well combined. Pour into the loaf tin and bake for 40-45 minutes or until a skewer comes out clean. Allow to cool completely before glazing with the Clover Bliss lemon meringue flavoured yoghurt. Slice and enjoy!
