Clover Cheesy Crinkle Cut Chips

Cheese sauce:
1 Cups Clover full cream milk
100g Clover Mature cheddar cheese
1 Tbsp Clover Butter
1 Tbsp Cake flour
Salt & pepper

Melt the butter in a saucepan over a medium heat.
Once melted, mix in the flour to make a smooth paste.  Cook it for one minute.
Gradually add the milk, whisking the mixture to make sure there are no lumps.
Simmer the sauce for 6-7 minutes, until thickened, remove from the heat.  
Stir in the Clover Mature Cheddar Cheese and season with salt and pepper.

500g-750g Rounded crinkle cut chips (or sliced potato chips or small potato rostis)
3 Tbsp Clover Sour cream
1 Tbsp Finely chopped chives

Preheat the oven to 180°C.
Place the chips onto an oven tray and bake them in the oven for 15-20 minutes or until golden brown.
Once cooked, season them with salt and pepper and pour the cheese sauce over the top.
Top with generous dollops of Clover sour cream, sprinkle with chives and serve!
