Clover cheesy stuffed onion rings
 

Clover Cheesy Stuffed Onions
 
Recipe by Melandie Esterhuizen
 
2 Onions, sliced in half (Inner layers removed and chopped and cooked until golden)
300g Beef sausage, cooked and sliced into small wheel
¼ Cup Crème O’Naise 
1 Cup Mushrooms, cooked until golden
100g Clover Tussers cheese, grated
100g Clover Mature cheddar cheese, grated
100g Clover Gouda cheese, grated
100g Clover Feta, crumbled
Toast to serve
 
Preheat the oven to 180oC. 
Line a baking paper with parchment paper and place the onion halves on the baking tray.
In a mixing bowl combine the sausage, Mayonnaise, mushrooms, Tussers, Mature Cheddar and gouda cheese until well combined. Fill each half with the cheese mixture, top with feta cheese and bake until the feta started turning golden. Serve warm with toast
 
Notes:
This is the perfect way to get rid all the left over veg in the fridge.
Use red onion for a sweeter profile.
Chicken or scramble egg could be used as alternative instead of beef sausages.
