Clover Classic Avo Nuggets with Basil Mayo

Serves: 2-3
Cooking time: 5-10 minutes

INGREDIENTS
2 avocados
140g flour
2 eggs, beaten
1-2 cups panko crumbs, seasoned 

FOR THE BASIL MAYO
1 cup Clover Classic Mayo, 2
1 tbsp wholegrain mustard
¼ cup fresh basil leaves, chopped
1 spring onion, chopped
Squeeze of fresh lemon juice
Salt and pepper to taste

METHOD
Peel and remove the pips from the avo’s and slice into quarters. Dip into the flour, followed by the beaten eggs and then into the panko crumbs. Place the coated avo’s into the airfryer and cook for 5-10 minutes at 200C, or until golden golden and crispy in colour.

Mix together the ingredients for the basil mayo, or you can blend until smooth and serve with Avo nuggets.
