Clover Classic Custard Date & Puffed Rice Cereal Bars

Clover Classic Custard Date & Puffed Rice Cereal Bars

300g Pitted Dates, chopped
250g Clover Butter
1 ½ c Sugar
2 eggs, beaten
6 cups puffed rice
Coconut for dusting


 
In a large sauce pan, melt the butter and sugar together, stirring until the butter is melted.
On a low heat add the dates and cook for about 15 minutes, stirring often to prevent the dates from burning.
Temper the egg mix by adding a little bit of the hot date mix to the egg.
Return to the heat and cook for a further 4-5 minutes.
Remove from heat and transfer to bowl. Fold in the puffed rice.
Sprinkle coconut on the bottom of a deep baking dish.
Add mixture and spread out evenly.
Top with coconut and cool completely before slicing into bars, perfect for the lunch box!
