Clover Classic Dahi Toast

Clover Classic Dahi Toast
 

Recipe by Josh Wiid 


1 tsp Black mustard seeds
6 Curry Leaves
1 Red onion, minced
1 Green chilli, minced
1 tsp Ginger and garlic paste
1 Cup Clover Classic yoghurt based dairy snack, plain
1 Tbsp Coriander, chopped
½ tsp Garam masala
4 Slices sourdough bread
Salt and Pepper
Olive pride oil for frying


In a medium heat saucepan, add a touch of Pride, and toast the mustard seeds until they begin to pop. Add curry leaves and flash fry until crispy. Drain oil and set aside.
Combine the onion, chilli, garlic and ginger, Clover Classic, coriander and garam masala to a bowl.
Mix together, taste and adjust seasoning with salt and pepper.
Spread Clover Classic filling over 2 slices of bread, top with the remaining slices of bread. Gently toast sandwiches in an oiled pan until golden brown.
Plate up the sandwiches and drizzle over the spiced oil. Serve immediately with fresh coriander, and a cucumber, tomato and red onion salsa.
