
Clover Classic Date Energy Balls

Prep time: 15-20 minutes
Ingredients
300g dates, roughly chopped
100g walnuts/mixed nuts, chopped
2 tbsp mixed seeds
100g dried cranberries
50g dried apricots, roughly chopped
For the coating
Clover Classic Berries dairy snack
½ tsp gelatin or agar agar
Dried Raspberry powder for sprinkling (optional)
Method
Combine the dates, nuts, seeds and dried fruits in a blender. Pulse until the mixture reaches a soft, chunky texture.
Take pieces of the mixture and roll into balls. You may need to wet your hands with water or oil, to prevent stickiness.
To make the coating, heat one tub of Clover Classic berries and sprinkle in the gelatin. Mix until smooth. It should have a thick consistency
Dip each date ball into the Clover Classic Berries dairy snack, any of the berries flavor. Make sure they are well coated. Sprinkle over dried raspberry powder (optional). Place into fridge or freezer to set.
