Clover Classic Sigara Borek

Clover Classic Sigara Borek
Makes: 10-12
Prep time: 25 minutes
For the Borek
3-4 phyllo pastry sheets, cut into long rectangles
½ cup Clover Classic spread, melted
3-4 feta discs, crumbled
1 egg, beaten
2 spring onions, chopped
2 tbsp chopped parsley
2 tbsp fresh dill, chopped
Oil to fry or bake in oven
For the yoghurt dip
1 cup plain yoghurt
1 clove garlic, grated
Salt and pepper to taste
Squeeze of fresh lemon
2 tbsp mixed herbs, chopped, for garnish
Place a rectangular phyllo sheet onto a board and brush with the melted Clover Classic fat spread. Layer with 2 more phyllo sheets, brushing with melted fat spread in between.
In a separate bowl, make the filling by mixing together the crumbled feta, egg, spring onions and herbs. Place a tablespoon of the filling on one short end of the pastry. Roll up into a spring roll shape. Keep repeating until all the filling and pastry is used up.
Heat a little oil in a saucepan and fry the Borek until golden and crispy. Alternatively, brush the Borek with more Clover Classic Fat spreads and bake in the oven at 180C, until golden in colour.
Mix together the yoghurt dip ingredients and serve with Borek.
