Clover Classic Spread Apple & Pear Galette

Crust
1 ½ Cup Cake flour
2 Tbsp Brown sugar
Pinch salt
150g Clover Margie Classic 60% Fat Spread, cubed and frozen
4-5 Tbsp Ice water


Filling
4 Apples, thinly sliced
4 Pears, thinly sliced
¼ Cup Cinnamon sugar
60g Clover Margie Classic 60% Fat Spread, Cubed and frozen
1 Egg, whisked, for egg wash


To Serve
Caramel sauce
Whipped cream/Ice cream


In a large mixing bowl, use your finger tips to rub together the Clover 60% fat spread, sugar, salt and flour until it resembles the texture of fine bread crumbs. Add 4 Tbsp of water and combine until a dough starts to combine. Add the extra 1 Tbsp of water if needed. Roll the dough into a ball and cover with cling wrap. Place in the fridge for at least 30 minutes.
Preheat the oven to 180oC. Line a baking tray with baking paper.

Roll the dough out on a lightly floured surface into a 30cm circle. Place the apples and pears about 6 cm from the edge of the dough working your way to the centre of the dough. Sprinkle the fruit with cinnamon sugar. Fold the edges of the dough over the fruit. Brush the egg wash over the pastry. Top the fruit with frozen cubes of Margie Classic 60 % Fat Spread and bake the galette for 30 – 40 minutes. Serve with whipped cream OR ice cream and a drizzle of caramel sauce


Notes
The dough could be made 2 days in advance. Do not keep the dough in the fridge for longer than 2 days.
