
Clover Classic Tomato, onion and Cheese Tart
Ingredients
1 sheet puff pastry, thawed
2 tbsp Clover Classic fat spread
200g vine/cherry tomatoes
2 red onions, sliced
1 tbsp brown sugar
2 cloves garlic, chopped
1-2 cups mozzarella cheese, grated
Fresh basil for garnish
Preheat the oven to 180C.
Heat a pan and melt the Classic fat spread. Add in the onions and sprinkle over the sugar. Saute until golden in colour then stir in the garlic. Cook for another minute and season with salt and pepper.
Roll the pastry out on a floured surface into a rectangle shape. Score the edge but be careful not to cut through the pastry
Place the cooked onion and tomatoes onto the pastry and fill the gaps with cheese. Bake in the oven for 15-20 minutes until the cheese is melted and the pastry is golden in colour.
Garnish with fresh basil for serving
