Clover Fresh Milk Sweetie Pies

Clover Fresh Milk Sweetie Pies

1 Cup Clover fresh full cream milk
125g Clover MooiRivier salted butter
1 Cup Cake flour
1 tsp Salt
4 Eggs
 
4 Egg whites
1 tsp Cream of tartar
1 ¼ Cup sugar
¼ Water
1 tsp Vanilla
 
Dark OR milk chocolate, melted
 
Preheat the oven to 240oC
In a medium sauce pan, heat the milk, and butter until the mixture is boiling. Remove from the heat. Add the cake flour and salt and stir to combine. Take back to the heat and cook for about 1 minute. Remove from the heat and incorporate one egg at a time. Place in a piping bag. Pipe even sized round blobs on a baking tray, lined with baking paper. Bake in the oven for 15-18 minutes. Leave the oven door closed, and turn the heat down to 180oC. Allow to cook for another 10 minutes before switching the oven off and allowing the pastry to slightly cool before removing from the oven. 
 
Place the water and sugar in a medium sauce pan. Cook on a medium heat until large bubbles start to form (soft ball stage).
In a large mixing bowl whip, the egg white and cream of tartare until foamy. Add the warm sugar syrup mix until the mixture is thick and have cooled down. 
Place the marshmallow fluff in a piping bag and pipe into the pastry casings. Dip in chocolate and serve! 
 
Tips:
Sprinkle your pastries with icing sugar and water before baking. The sugar and steam will create for a crunchier pastry. 
The cream of tartar is optional, but is a great stabiliser to the egg white.
