Clover Fresh Milk Taco Bake

Clover Fresh Milk Taco Bake
Baking time: 15-20 minutes
Serves: 4-6
 
INGREDIENTS
1 tbsp oil
1 red onion, chopped
2 cloves garlic, chopped
1 tin kidney beans, drained
1 tin corn kernels, drained
2 tsp chilli powder
2 tsp ground cumin
1 tsp ground coriander
1 tin chopped tomatoes
Salt and pepper to taste
 
For the cheese sauce
2 tbsp butter
2 tbsp flour
1-2 cups Clover Fresh milk
1 cup Clover Tussers or Cheddar cheese
Salt and pepper to taste
Handful fresh coriander, chopped
 
10 mini tortilla wraps
More cheese for the topping
Fresh Coriander for garnish
 
METHOD
Preheat the oven to 180C.
Heat the oil in a large frying pan and sauté the onion until softened. Add in the garlic and spices and cook for a few seconds.
 
Add in the beans, corn and chopped tomaotes. Season with salt and pepper and mix well. Cook for a few minutes to allow the flavours to combine
 
To make the cheese sauce
Melt the butter in a saucepan and whisk in the flour. Gradually add the Clover Fresh milk and stir in the cheese. Season with salt and pepper and stir in the fresh coriander.
 
In a greased casserole dish, add a layer of the bean and corn mixture.  Pour the cheese sauce over the bean mixture then layer the tortillas over. 
Repeat until all your ingredients have been used up.
 
Sprinkle cheese over the topping and bake in the oven for 15-20 minutes – to allow all the flavours  to combine.
 
Garnish with fresh coriander to serve.
 
You can also use nacho chips instead or hard taco shells for this recipe
