
Clover Nolac Spiced Chickpea Bowl
SERVES: 2-3
Cooking time: 15-20 minutes
Ingredients
For the chickpeas
1 red onion, chopped
2 cloves garlic, chopped
1 tbsp cumin
1 tbsp smoked paprika
1 tbsp chilli powder
½ tsp cinnamon
1 tin chickpeas, drained
1 tin chopped tomatoes
Salt and pepper to taste
For the bowl
Half cucumber, cut into small cubes
1 cup cooked quinoa/couscous
½ cup Nolac dairy snack, plain
Squeeze of fresh lemon juice
Olive oil for drizzling
½ avo, sliced thinly
Handful fresh coriander, roughly chopped
Method
Heat a glug of oil in a saucepan and sauté the onion until softened. Add in the garlic and spices and cook for a minute. Stir in the chickpeas and allow to cook for another minute. Add in the chopped tomatoes and season with salt and pepper. Simmer for 5 minutes and set aside.
To assemble the bowl, arrange the quinoa, spiced chickpea and cucumber in the bowl. Squeeze over the lemon juice and drizzle the olive oil. Add a generous dollop of the Clover Nolac dairy snack and garnish with sliced avo and fresh coriander.
