Clover Olive Pride Springtime Salad

For the Honey Mustard Dressing :
2 Tbsp Wholegrain mustard
1 Tbsp Honey / Sugar
1 Lemon, juice and zest
½ tsp Salt
1 Cup Clover Olive Pride blended oil 
For the salad :
100g Watercress, washed
1 Cup Beetroot, cooked, peeled and cut into wedges
1 Cup Peas, blanched
4 Eggs, boiled and halved
2 Avocado, sliced and fanned
½ Cup Radish, thinly sliced
1 Cup Clover Feta, crumbled
Sunflower seeds / nuts and micro herbs to garnish          
Dressing :
Combine mustard, honey, lemon juice and salt in a bowl, and mix thoroughly until salt is dissolved.
Place bowl onto a folded dish towel to avoid spilling, then slowly stream in Olive Pride oil while whisking. Continue to whisk until all oil is incorporated. Do not add oil quickly to avoid splitting. Set aside.
Begin layering the salad starting with the watercress, followed by beetroot and peas. Add a few spoons of the mustard dressing. Arrange eggs around the bowl, followed by avo and scatterings of radish. Add more dressing.
Finish by scattering the Clover feta, seeds and finally micro herbs. 
Store remaining dressing in a jar in the fridge for up to a week.
