Clover Olive Pride Valentines Breakfast

2 Slices Bread of your choice
2 Medium Eggs
½ Avocado
80g Smoked Salmon Ribbons or 150g Cooked Bacon (optional)
¼ Cup Baby Tomatoes, halved
3 Tbsp Hollandaise Sauce
1 Tbsp Olive Pride Extra Virgin Olive Oil
Salt and Pepper to taste

Heart shape cookie cutter

Using the cookie cutter, cut a heart shape out of the centre of the two bread slices.
Bring a non-stick pan to a medium heat, add the Olive Pride Extra Virgin Olive Oil, then place the bread slices into the pan. 
Gently crack each egg into the centre of the slice, allow the egg to fill up the heart space.
Allow the egg to cook through until it is done to your loved one’s preference. 
Remove the toast and add the halved baby tomatoes, add some more olive oil if needed. 
Cook the baby tomatoes for 3-4 minutes until they have softened.
To make the avocado rose, peel the skin and remove the pip from the avocado, place the cut side down on a cutting board. Then slice the avo very thinly so that you can shape the rose easily. 
Once the avo has been sliced fan it out into a long line, allowing the slices to overlap each other. Starting at one end of the avo, curl the slices toward the center until you get a rose shape.
Serve the egg toast with the avocado rose, smoked salmon or bacon, hollandaise sauce and baby tomatoes.
