Clover Spicy Chicken Quesadillas

Ingredients
4 Tortilla Wraps
2 Tbsp Butro Oil+ 1/2 Tbsp extra
2 Chicken Breast Fillets, finely chopped/ minced
1/2 cup chopped Red Onion
1 tsp Garlic, chopped
1 Tbsp Cajun seasoning
2 Tbsp Piquante Peppers roughly chopped
1/2 tsp Chilli Flakes
1/4 cup Clover Cheddar Cheese,1/4 cup Clover Gouda Cheese, grated and mixed together
Salt and Pepper, to taste
1 Green Onion, thinly sliced
1 tablespoon Coriander, chopped
 
Method
Add 2 tablespoons Butro Oil to a pan and sauté onion.
Add minced chicken, garlic, Cajun seasoning and chilli cook for 5min or until chicken is cooked.
Allow to cool.
Oil a pan with remaining Butro Oil and place the tortilla in the pan, sprinkle 1/4 of the cheese over the tortilla, then top with the chicken, piquante, green onion and cilantro and top with more cheese.
Cook until the quesadilla is golden brown on both sides and the cheese is melted, about 2-4 minutes per side.
Serve with Avocado salsa.
 
Avocado Salsa
2 ripe Avocados
1 Cup of Greek Yogurt
Juice from 1 Lime
1 clove of Garlic, chopped
1/4 of an Onion, diced
1-2 Jalapenos depending on the desired level of heat
1/4 cup Coriander
Salt and Pepper to taste
 
Method
Add all of the ingredients to a blender and blend until smooth
