
Clover Vegan Waldorf Salad

Homemade vegan mayonnaise:
250ml Olive Pride blend of seed oils and extra virgin olive oil
2 tsp White wine vinegar
½ Cup Good hope regular unsweetened soymilk
1 Tbsp Maple syrup
Pinch of salt
Place all the ingredients in a blender and blend until smooth. Keep in an airtight container until needed.
For the salad:
2 Cups Cos lettuce, shredded
1 Cup Grapes, halved
1 Cup Apple, cut into bite size pieces
1 Stick celery, chopped
½ Cup Walnuts, chopped
3 Tbsp Homemade vegan mayonnaise
Combine all the ingredients in a mixing bowl until well combined.
Serve and enjoy!
