DeLonghi marble cake with milk chocolate ganache

For the cake:

190g butter
225g sugar
4 free range eggs
1T vanilla sugar or 1t vanilla extract
12g baking powder
375g cake flour
1/2t salt
165ml milk
22g quality cocoa


For the ganache:

200g milk chocolate melted together with 3/4 cup cream


Serve with whipped cream

Cream the butter and sugar together until thick, pale and fluffy. Add the vanilla and eggs and mix through, combining well. Sieve in the flour and baking powder, folding through to combine with the salt. Add the milk and combine to form the batter.


Divide the batter in half and mix the cocoa through the one half.


Without the paddle using both top and bottom heating elements and on heat setting 2, grease and flour the Multifry basket. Add the batter alternating between the chocolate and plain batter before running a fork through and creating the marble effect.


Bake for 40 minutes then turn off the bottom heating element and keep cooking for another 10 minutes. Allow to cool slightly before turning out and drizzling over the ganache and serving with the whipped cream.
