Deep Fried Clover Amasi Chicken Livers

500g Chicken livers, cleaned & cubed
2 Cups Clover amasi, plus 2 Tbsp extra
1 Cup Flour
1 ½ tsp Garlic powder
1 ½ tsp Onion powder
1 tsp Paprika
1 tsp Dried oregano
Salt and pepper

Place the chicken livers in a colander, and rinse with water.
Place the livers into a mixing bowl, add the Clover amasi and allow to marinade for 4 hours minimum or overnight.
In a large mixing bowl add flour, garlic powder, onion powder, paprika, oregano and season with salt and pepper, mix well to combine.
Whisk in the 2 Tbsp amasi to form large clumps, these add extra crispy bits.
Shake each piece gently to get rid of any excess amasi, then coat them in the flour, press the flour on it firmly to make sure the coating sticks to all the sides, set aside.
In a sauce pot bring about 6cm frying oil up to a medium-high heat, carefully add the coated livers in small batches.
Allow to fry for 8-10 minutes until golden brown, crunchy and cooked through. Place on paper towel to drain any excess oil and allow to cool slightly before serving.
Serve with chakalaka.
