
Egg And Bacon Griller Breakfast Casserole
Serves 4-6
Ingredients:
- olive oil
- 3 garlic cloves, crushed
- 1 leek, chopped
- 1T fennel seeds
- 2 bay leaves
- 8 Renown pork sausages, pan-fried from frozen and chopped
- ½ cup red wine or beer
- 1 x tinned tomatoes
- 50ml tomato paste
- salt and black pepper
- 6-8 Enterprise traditional bacon grillers, sliced
- 4-6 eggs
- chopped chives, to garnish
Method:
Heat a little olive oil and sauté the garlic until golden. Add the leek and sauté until soft. Stir in fennel and bay leaves. Add the chopped Enterprise Renown pork sausages and sauté until browned.
Add the wine and reduce for 3 minutes. Add the tinned tomatoes and paste. Simmer for 10 minutes. Adjust the seasoning.
Add the Enterprise traditionalbacon grillers and saute until cooked through. Crack the eggs into the sauce, cover with a lid and allow to simmer gently until the eggs are cooked. Garnish with chives and serve with hot buttered toast.
