Enterprise Meat Platter Makeover
Serves 12-16

Baked ricotta with bacon

4 -8 strips Enterprise streaky bacon
500g ricotta cheese
1 egg, lightly beaten
2 tsp fresh thyme
Pinch chilli flakes

 


1.     Preheat oven to 200C.

  1. Grease two large ramekins and line with the bacon.
  2. Mix the ricotta, egg, thyme and chilli.
  3. Season well and press into the lined mould.
  4. Bake for 25 minutes or until golden and set.
  5. Allow to cool slightly before unmoulding and serving.

 

Marinated grilled vegetables
500g vegetables (peppers, onions, aubergine)

Olive oil

50ml red wine vinegar

Dried oregano

1 pkt Enterprise cold meats


1. Grill a variety of vegetables on a griddle pan, brushed with olive oil and season well.

  1. Place in a bowl and drizzle with red wine vinegar and sprinkle with dried oregano.
  2. Serve warm tossed with Enterprise sliced meats.

 

Salami bruschetta with pickled cucumber ribbons
1 ciabatta bread

Olive oil

Garlic clove

Enterprise Salami

Pickled cucumber


1. Slice a loaf of ciabatta or French loaf, drizzle with olive oil and toast until golden under a hot grill.

  1. Rub with a clove of garlic before topping with salami and pickled cucumber ribbons.

 

Honey soy and sesame cocktail sausages
1 pkt Enterprise cocktail sausages

Olive oil

2 Tbs honey

2 Tbs soy

2 Tbs sesame seeds


1. Saute Enterprise cocktail sausages in olive oil until golden.

  1. Drizzle with honey, soy sauce and sesame seeds.

 

Cheese and ham rolls
1 pkt Enterprise cold meat

250g cream cheese, flavoured

Crackers


1. On a clean surface lined with cling wrap, arrange a square of Enterprise cold meats.

  1. Spread a tub of flavoured cream cheese over the ham and roll up, using the cling wrap to form a sausage shape.
  2. Slice into disks and serve with crackers.

 

Crispy cheese straws
500g puff pastry

1 egg, beaten

250g cheddar cheese

1pkt Enterprise cold meats

 

  1. Roll out ready-made puff pastry thinly and sprinkle with cheese and herbs of your choice on half of the pastry. Brush the other half with egg wash and fold over.
  2. Roll with a rolling pin to press the two sides together. Cut into 1cm strips and twist.
  3. Bake at 200C for 10-15 minutes until golden.
  4. Wrap the end of each cheese straw in Enterprise cold meats.
