Fresh Oysters With Litchi And Grapefruit Granita
Serves 4 as canapés
Ingredients:
- 3/4 cup (180 ml) castor sugar
- 1/2 cup (125 ml) water
- 3 grapefruit, juiced
- 2 Tbs (30 ml) vodka
- 475 g litchis, pureed
- 12 Oysters, shucked
- Coriander leaves to garnish
Method:
- Over medium heat, dissolve sugar in water.
- Add grapefruit juice, vodka and litchi puree then mix well.
- Pour onto a baking sheet or place into a freezer bag and put in freezer for 2 hours.
- Place the open oysters on ice.
- Using a fork, scrape along the surface of the granita to form small ice flakes.
- Place teaspoon-fulls of the granite onto the oysters.
Serve each oyster garnished with a coriander leaf.
