Frozen Charlotte Royale
Serves 4-6
Ingredients:
- 1 jam Swiss roll
- 1L full fat Parmalat vanilla yoghurt, slightly softened
- 250ml cream, whipped
- 1 punnet raspberries
- 1 punnet strawberries, chopped
Method:
- Cut the Swiss roll into thin slices.
- Line a dome-shaped freezer safe bowl with cling wrap.
- Arrange the sliced Swiss roll in the bowl to cover the surface – this will form the outside cover of your final dessert.
- Mix the raspberries and strawberries into the yoghurt, then fold in the cream.
- Pour the yoghurt mixture into the sponge-lined bowls then top with more Swiss roll slices.
- Cover with cling wrap and place into the freezer for a minimum of 3 hours or until completely frozen.
- To serve, turn out of the bowl, remove the cling wrap and place onto a serving plate.
- Slice wedges of the dessert and serve with more fresh berries.
