Fry’s Big Fry Spicy Mexican Inspired Boerewors Rolls

Fry’s Big Fry Spicy Mexican Inspired Boerewors Rolls

PREP TIME : 20 minutes
COOK TIME : 20 minutes          
INGREDIENTS :                          
2 ripe avos, peeled
1 red chilli, finely sliced
1 lime, zest and juice
1 tbsp vegan mayo
½ cucumber, cubed
¼ cup pineapple, cut into small blocks
1 cup exotic tomatoes, chopped
1 red onion, finely chopped
2 tbsp olive oil
1 tbsp red wine vinegar
2 tbsp coriander, chopped
2 pickled jalapeno chillies, sliced                  
4 Fry’s Big Fry Boerewors sausages
30ml oil
4 hotdog rolls of choice, sliced open down the top and toasted
Salt and pepper
Chipotle chilli sauce and sides of choice ( salad / chips ) or serve as is                                                                                                                             
Place the avos, chili, lime and mayo in a mixing bowl, and mix well until combined. Add a big pinch of salt and pepper and mix again. You can go as smooth, or chunky as you would like. Set aside.

For the salsa, simply combine the cucumber, pineapple, tomato, onion, olive oil, vinegar and coriander in a mixing bowl with a big hit of seasoning. Set aside.
For the boerewors, prepare the sausages as per packet instructions.
To assemble the Mexican Inspired Hotdog, smear your guacamole on either side of the toasted roll. Add you Big Fry Boerewors, then top with the fresh salsa, and lastly the sliced jalapeno chillies. Finish with some fresh coriander and chipotle chilli sauce, along with your favourite sides.
