Garlic ‘n Chilli Flattened Chicken

Serves 4 

Recipe by Justine Drake

  • 8 chicken breast fillets

Marinade:

  • 2 cloves garlic
  • 1 - 2 chillies
  • Juice and peel of 1 lemon
  • Large handful flat leaf parsley
  • Handful basil
  • Salt and milled pepper
  • 2- 3 Tbs (30-45ml) olive oil

 Method:

  1. Whizz marinade ingredients in a blender and set aside
  2. Place chicken breasts between two sheets of cling film and flatten with a mallet
  3. Place in a dish and toss with marinade.
  4. Marinate for 30 minutes if time allows.
  5. Heat olive oil in a pan and fry chicken for 3 – 5 about minutes
  6. Add any left-over marinade and sauté until chicken is cooked through
  7. Serve on brown and wild rice with fresh tomato and red onion salad on the side.
