Garlic ‘n Chilli Flattened Chicken
Serves 4

Marinade:
- 2 cloves garlic
- 1 - 2 chillies
- Juice and peel of 1 lemon
- Large handful flat leaf parsley
- Handful basil
- Salt and milled pepper
- 2- 3 Tbs (30-45ml) olive oil
Method:
- Whizz marinade ingredients in a blender and set aside
- Place chicken breasts between two sheets of cling film and flatten with a mallet
- Place in a dish and toss with marinade.
- Marinate for 30 minutes if time allows.
- Heat olive oil in a pan and fry chicken for 3 – 5 about minutes
- Add any left-over marinade and sauté until chicken is cooked through
- Serve on brown and wild rice with fresh tomato and red onion salad on the side.
