Glazed Carrot And Haloumi Salad

Serves 4

Ingredients: 

  • 300g carrots, peeled and halved lengthwise
  • 50g butter
  • 2 Tbs brown sugar
  • 2 Tbs honey
  • 4 Tbs olive oil
  • Salt and pepper
  • 300g haloumi cheese, sliced thickly
  • 2 tsp fennel seeds
  • 300g spinach, washed and roughly chopped

 Method:

  1. Preheat oven to 180C.
  2. Place the carrots, butter, brown sugar, honey, 2 Tbs of olive oil and seasoning into a baking dish then toss to coat the carrots.
  3. Roast for about 15 minutes or until the carrots are tender and sticky.
  4. In the meantime, heat a griddle pan.
  5. Place the sliced haloumi into a bowl and sprinkle with 2 Tbs olive oil, fennel seeds and seasoning.
  6. Griddle the haloumi on both sides until golden brown.
  7. Toss the spinach with the carrots and the haloumi cheese and any cooking juices before serving.
