Glazed Carrot And Haloumi Salad
Serves 4
Ingredients:
- 300g carrots, peeled and halved lengthwise
- 50g butter
- 2 Tbs brown sugar
- 2 Tbs honey
- 4 Tbs olive oil
- Salt and pepper
- 300g haloumi cheese, sliced thickly
- 2 tsp fennel seeds
- 300g spinach, washed and roughly chopped
Method:
- Preheat oven to 180C.
- Place the carrots, butter, brown sugar, honey, 2 Tbs of olive oil and seasoning into a baking dish then toss to coat the carrots.
- Roast for about 15 minutes or until the carrots are tender and sticky.
- In the meantime, heat a griddle pan.
- Place the sliced haloumi into a bowl and sprinkle with 2 Tbs olive oil, fennel seeds and seasoning.
- Griddle the haloumi on both sides until golden brown.
- Toss the spinach with the carrots and the haloumi cheese and any cooking juices before serving.
