Gluten-free mocha brownies

Makes 24


Recipe by Angie Boyd


275g dark chocolate                                                                                     

225g butter                                                

3 eggs                                                          

2 tsp good-quality coffee granules dissolved in                                                    

30ml hot water                                                                                               

225g Selati muscovado sugar                                                                                                       

37g corn flour                                                                                                  

2.5ml baking powder                                                                                   

37g cocoa powder

50g hazelnuts, skinned and chopped roughly


  1. Grease the ramekins or grease the pan and line with baking parchment.
  2. Place the chocolate, coffee liquid and the butter into a large glass bowl.
  3. Melt in the microwave on high for 1 minute at a time, stirring after each 1 min interval.
  4. Once melted, whisk in the eggs and sugar until smooth.
  5. Then fold in the sifted corn flour, baking powder and cocoa powder and mix gently through.
  6. Pour into the tin, sprinkle some chopped hazelnuts over and bake for about 20-25 minutes or until cracked on the surface, but still slightly soft to the touch.
  7. Remove from the oven and either:  leave to cool completely, turn out of the pan and slice.
