Gnocchi With Gorgonzola Sauce

Ingredients:
- 1,2 kg potatoes, boiled and mashed
- 300 g bread flour
- 100 g Parmesan cheese, grated
- Pinch of salt
- 4 egg yolks
Gorgonzola sauce
- 200g blue cheese
- 200 g fresh cream
For Garnish
- 100g Roasted walnuts
- Parmesan shavings
- Chopped parsley
Method:
- Combine the mashed potatoes, bread flour, parmesan cheese and salt.
- Add enough egg yolks to form a soft, kneadible dough.
- Roll into small balls, then make an imprint using a fork - keep the gnocchi on a dusted floured tray.
- Drop the gnocchi into a large pot of salted, boiling water, they are cooked when they float.
- In a pan, heat the cream, then add the gorgonzola cheese, stirring until melted.
- Add the gnocchi and stir gently to coat the gnocchi with the sauce.
- Garnish with the walnuts and parmesan before serving.
