Gnocchi With Gorgonzola Sauce

 

Recipe by Giorgio Nava

Ingredients:

  • 1,2 kg potatoes, boiled and mashed
  • 300 g bread flour
  • 100 g Parmesan cheese, grated
  • Pinch of salt
  • 4 egg yolks

 

Gorgonzola sauce

  • 200g blue cheese
  • 200 g fresh cream

 

For Garnish

  • 100g Roasted walnuts
  • Parmesan shavings
  • Chopped parsley

Method:

  1. Combine the mashed potatoes, bread flour, parmesan cheese and salt.
  2. Add enough egg yolks to form a soft, kneadible dough.
  3. Roll into small balls, then make an imprint using a fork - keep the gnocchi on a dusted floured tray.
  4. Drop the gnocchi into a large pot of salted, boiling water, they are cooked when they float.
  5. In a pan, heat the cream, then add the gorgonzola cheese, stirring until melted.
  6. Add the gnocchi and stir gently to coat the gnocchi with the sauce.
  7. Garnish with the walnuts and parmesan before serving.
